Grape ripening and harvest range from mid-September to end October. The production process and the quality, based on agronomic care in the vineyard and on the growing techniques, are strictly controlled until the culminating point of the grape harvest corresponding to a careful and rigorous selection of the grapes. All procedures aiming to reach quality continue in the transformation and the wine-making processes. Come in this period and you could watch the country house’s staff while it is working at this activity with a lot of passion and dedication, following the ancient tradition.
Not only wine. Farm “Belvedere” is well-known for its production of extra-virgin olive oil. As the typical natural backdrop of the Valdichiana requires, the orderly rows of olive trees, the vineyards, the cornfields and the fields of sunflowers are placed side by side and create a beautiful view.
Olives, hand-picked in October and November, are put into crates and taken to the oil mill where they are pressed within 48 hours to avoid oxidation and to preserve the organoleptic properties and peculiarities connected to taste and olfaction.
The cooking lessons are given in the “Locanda della Luna” at Villa Rosa dei Venti about 300 meters from Villa Corte delle Stelle, 5 minutes walking distance. All of the ingredients you will use are purchased each morning from local markets or they are picked from the kitchen garden and so you will learn to cook with vegetables in season. Throughout your time at culinary school you will learn about the ingredients and the traditions surrounding each of the dishes prepared. During the cooking lesson we'll do a break and we'll taste our wine.
The cooking lesson is followed by meal.
