The women in the Micheli household are true artisans of culinary delights. They have perfected, protected, and passed down traditional recipes built around the true flavors of the produce grown in the vegetable gardens on the Azienda Agricola Belvedere farm, of which the Villa is a part. They ably transform fresh vegetables into local dishes that both please the palate and the eye. At the heart of our farm is extra virgin olive oil, which is produced from the olive trees that grow around the estate.
The olives, which are picked between the end of October and the beginning of November, are placed in small crates and taken immediately to the oil mill, where they are cold-pressed within 48 hours to avoid oxidation and to preserve every ounce of their organoleptic properties and aromas. Guests can purchase this oil directly from us and go home with a “live” souvenir to be used at the table every day.
The splendid bounty that comes from the fruit trees in our orchards is transformed by the Micheli women into sublime fruit jams, which are perfect for breakfast, packed full of energy and flavors. They, too, are an essential part of a holiday at Corte delle Stelle.
Meanwhile, our vineyards give us our “red gold,” a constant presence at meals at Corte delle Stelle. We craft a Sangiovese wine from grapes that grow on vines adjacent to the Villa. This wine that is subjected to rigorous quality control every step of the way, from its growth in the vineyard, with careful plant care and cultivation techniques, right up to harvest time. We decide when to pick with as much great care as how we harvest, the grapes then going to the cellars for processing.
